valentines

on friday, while ava scribbled on some yo gabba gabba valentines, i decided to make some sweet treats to accompany them.  we had good intentions to make and deliver valentine's to all of her friends, but we decided to keep it simple and make these deliveries only to those who live closest to us.
[my apologies to her friends who do not live within a mile radius... i'm just not in good enough shape to pump the girls in the bike trailer any further than our neighborhood.]

these are one of my favorite treats, and i rarely make them 'cause i just don't have the patience to do so.  they're not hard, they just take some time....
here's the recipe...

bake a cake mix as directed.  [i used a red velvet cake for valentine's day, but any mix will do.]
let cake cool then gently pull it apart with a fork until it's all crumbly.
mix in one 12oz tub of frosting well. [i used cream cheese frosting, but again, any variation of frosting and cake will work.]
set mixture in the refrigerator until it's firm enough to handle.
roll into 1 1/2" balls and stick a lollipop stick in the center.

melt enough chocolate or almond bark to dip these bad boys in.  i used an entire package of vanilla almond bark.
allow balls to cool and set.
while you're waiting, do not read the nutritional info on the almond bark wrapper, just throw it away.

taste test a few... you know, just to make sure they are tasty and delicious.

pack and deliver like ups trucks...

save the ugly ones for yourself and your family and try not to eat the whole plate before your husband gets home from work.
promise yourself not to make them for another few months since you apparently can't stop popping those cute little treats in your mouth.

i love the throw the wrapper away part... you have to do that with many things. but you don't need to feel guilty for eating them,,, remember you hand delivered those so you got a nice little work out. haha.
